A very Merry Christmas gift

It all started when we were browsing through the Xmas stalls in Sri Hartamas while waiting for the man to finish up some work. Saw a nice Xmas decorative cake tin and thought it be nice to bake a fruit cake and pack it in for a home made gift.

And so it started, the rounding up of the ingredients. An almost full bottle of cognac sat in my bookshelf for a year now, next to half a bottle of black label. Yes, my bookshelf contains food items, haha for lack of space and novelty, yea rite. And a hunt in my baking supplies, i still had the silverbird fruit mix from 6 months back, still within expiration and the rest was easy.

I had earlier referred to my favourite recipe book- The Google and discovered this easy peasy job. I halved the ratio.

All went well till i attempted to pry the cake off the tin and it did the crumble tumble on me. Never made it to my lovely tin which i had incidentally bought for RM7.90. But it tasted wicked with all that cognac. Apparently i had misread the recipe and another cup of flour had escaped my attention. How can that happen???!!

So ran to the nearest store to grab another 400gms of fruit mix and this time was extra careful, but apparently not careful enough for i missed out on the 1/2 tsp baking soda. Geez, was too late, cake in oven already. Dint rise as the first one but am hoping the 2 sloshes of cognac i fed it with will moisten it up somehow to some agreeable state. Fingers crossed. Cake into tin and Merry Christmas to all!
