Love kevar puttu. Love the rice flour version too. So why not combine them. It's been ages and good puttus are hard to come by these days.
I roasted a packet of rice flour and half a packet of kevar flour, coz i had half left in the fridge. I like to brown the flour a bit for the toasty smell.
I like to work the flour while still hot. Sprinkle some salt into flour and handfuls of water till it forms really thick bread crumbs. Heat up steamer and throw a daun pandan into the water for the nice fragrance. Load up flour into steamer and steam for 10 minutes. You can use puttu steamer if you like. I like it freestyle. Then give it a quick stir around, sprinkle a few more handfuls of water, stir again and steam for another 10 mins. Finally warm a tbsp of ghee, throw in 3-5 cardamons and sprinkle over cooking puttu and stir.
Steam another 5 mins and puttu is cooked once it is translucent and fluffy. Can be eaten with the usual fresh grated coconut/jaggery combination or eaten with curry/sambal/egg/banana version like how my other half does.
