
A Chinese friend sent me a box of organic sunflowers seeds. It be a waste to just roast them and eat them.

Actually the afternoon before, i had been idylling away some time in front of the TV and caught Nigella effortlessly churning out this Honeycomb aka Hokey Pokey concoction in like 5 minutes. So theoratically in my head, the combination of brittle honeycomb and crunchy sunflower seed seemed really appealing. Except my PC was in the shop and i could almost swear Nigella had mixed sugar and butter ... only to Google it up the next day and find out it was actually golden syrup.

So churn as i did, my bubbling lava of sugar was just not happening. In fact it started to burn. As in all sugar recipes, it is about temperature.

30 seconds can make all the difference between a candy and a caramel. Hence my title to the post coz i like to think i fell in between. Actually if i had waited another 30 seconds, i would have ended up with charred sugar. Anyway, in my attempt not to make my mistake too obvious, i decided on a bit of mask job. I layered the seeds at the bottom of the tray, poured the sugar over it and sprinkled some coconut flakes on top for more distraction.

An aunt took a liking to its burnt caramel taste and finished the whole batch for me. It was not bad but a tad sweet for me.
Maybe I should have just roasted the damned nuts and done away with it.
