It is definitely eggs for this version. And crushed tofu for the bite that prawns normally give.
Ok, you canNOT CHAR kuay teow without prawns, eggs, garlic and fish sauce....it is a divine recipe. But because of double standards of vegetarianism, sometimes you have to sacrifice your taste buds. This recipe below is as far as you can go, a good basic recipe without frills.
Get fresh good quality noodles. Be careful not to end up with substandard powdery version, bad noodles will leave you traumatised.
1 packet fresh kuayteow that is firm to touch.
4 large eggs beaten with a dash of light soya sauce.
2 large tofu crushed and sauted till light brown with light soya sauce and a crushed clove of garlic.
A few stalks spring onions chopped in 2"
Fresh crunchy beansprouts a handful.
1 whole pod/10 cloves garlic, peeled and minced.
Very good quality light soya sauce, i use PoPo.

And this is non spicy version, so no chillies. You can add chopped chilly if you want later.
Saute garlic in 1tbsp oil till fragrant, in goes the kuayteow and stir well, let is soak up the garlic oil. Dashes of light soya sauce in between as per taste. Just take a fork, pick up a few noodles and taste. Pour beaten egg all over noodle, let soak and cook on medium heat, stir well. Then finally a dash of thick soya sauce, taste again, stir quickly, add the springs onions, beansprouts and sauted tofu, cook like 20 seconds and dish up. I have this tip, let the noodles rest 5 mins before you eat, it will get tastier.
