As early as i learnt to bake a cake at 8 years old, (one of the many moves my mom made to get me off her back), i started experimenting. No idea when i combined custard and jelly but apparently i learnt many years later is actually an established recipe. But those day i would like to believe i invented something new.
Pretty simple really especially if you are not making your own custard. I rely on the Bird's custard mix, it tastes better than most.
For the bottom layer I used a tin of evaporated milk and half a tin of water. Let it come to simmer under low fire. Add a cup of sugar and tsp of vanilla. Now dilute a cup of castard powder in half a cup or so of water. Then pour into the simmer milk and stir fast so it won't lump up. Keep stirring till it reach the max custard consistency. Will take you less than 5 mins actually. Now pour into a see through container- the visual effect is always inviting. Let cool in the fridge for 10 mins.
Now get a box of jelly mix and follow instruction. I used mango jelly and lessened the water by 100ml to 300ml although my mix required 400ml because i wanted my jelly to be less wobbly to hold the fruits well. I opened a can of peaches, drained excess liquid and arranged the fruits on the custard. Once the jelly is cooked per instructions, pour on top of fruits. Chill and enjoy. You can use different combination of fruits and jellies like cherry jelly with cocktail fruits, or pineapple jelly with lychee are nice. Experiment la. It's fun.
