Chocolate chip muffins

Tried Nigella recipe first as that pic of her wearing the tiny little 'English Muffin' t-shirt tends to leave some visual imprints in people's mind ;), but the recipe didnt really work for me. And my Haier oven is a bit of an ass, more efficient in 'grilling' cakes than baking 'em.

Finally grabbed another similar recipe off the net (credits goes where due) and this is the basic ratio which i twicked a bit (actually more than a bit).



3 cups self- raising flour, 1 cup sugar, 1 tsp salt, 1tsp baking soda all nicely mixed. In a separate bowl, combine (twick! instead of melted butter)1 cup oil (corn or canola is the best choice) , 2 eggs, 1/2 milk (twick! plus 3 tsp lime or lemon juice) and whisk a bit. Pour little by little into flour mix, and combine 1 1/2 cup of good chocolate chips. (i used Van Houten mini chips). Bake according to your oven instructions till slightly golden at the sides. The recipe said 12 muffins, but i got 16.
