Banana Muffin

The internet, is Godsent. I think it is God's way of reminding us to care and share and not think too highly (or even lowly) of ourselves as we are, what someone famously said, spiritual beings having billions of human experiences. In the last ten years, internet has been my source of solace, wisdom, inspiration, knowledge and i tell you, the best ever banana muffin recipe. If only i can remember where i last jotted this one from, but 'whosever' it is, the credit is solely yours. Vaguely it was 'a cat that can cook' :).

Here goes.

4 large bananas mashed (use your favourite, mine, rastali)
3/4 cup fine sugar
1 egg
1/3 cup good butter (i swing between Tatura butter or Meadow Lea marg)
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Stir the wet things first and then combine the dry stuff. Easy peasy. No tweaking necessary. Makes 12 muffins, a rare combination of moist and fluffy.
