Instant Cheese and Cumin Buns





My new boss is very demanding. No offdays, no rest hours and no clocking outs.. everything must be done according to his schedule or else he will holler the house down, yes, the house. My boss is 8 months old and my life now, revolves around him. Except for the half an hour gaps he 'allows' me between his naps during day time, im at his beck and call. He doesnt let me out of his sight. Nope. Hence housework and cooking and everything else, if ever possible, has to be done within those gaps. At times, if you sneaked a peek into my household, you'd probably see me hurrying around the house like some mad woman to hang out the laundry, wash the dishes or cook some pretty quick meals with no frills. Therefore, anything more 'extravagant' as baking has to wait cause you cant leave half way to finish up later, if you know what i mean.

However on this seriously ungodly hour of the night, i found myself wide awake pushing my luck a bit. Yes, at 3.am, i am still up though the Boss is well into his long nightly sleepers. Quite impulsively, in a state of insane rebellion, id think, I found myself cleaning up my mixing bowl and in went 350gms of fine flour, half a packet of Mauripan instant yeast, a teaspoon of bread improver, 50gm sugar before mixing them around and adding like 3/4 cup of warm water before kneading them into a dough. Finally a tbspoon of corn oil and the dough was done. Now the actual instructions said to leave it to double for 30 mins, knead again and leave another 30 minutes and them form them into balls and leave a final 15mins before baking.
But as i glanced at the clock showing 3.30am already im thinking, 'what were you thinking woman?!!!' Ok, its time to bring it down. So taking from the first round of knead, i sprinkled a teaspoon of cumin which really is my favourite spice and tore off two cheddar cheese slices into four.




Then i formed 8 little balls with the dough and pressed the cheese into its centre and arranged the smoothened ball into my small baking tray 8". Then tore off another slice of cheese to garnish on top and swiped evaporated milk on top of buns. Ok, at least i should allow the yeast to do its work right, so i gave it 15 mins, no more. Then in the balls went into the oven and after 40 mins, there you go. Not disappointed at all.




The texture was like potato buns, dense yet fluffy and a mouthful to munch on, just how a good self respecting bread should be, thats my opinion

8 months already wow. but on the brighter side, nothing beats the smell of freshly baked bread. yummy
