
There are many versions... and then there is my version.. and that's the short cut trimmed down , it-doesn't-matter-how-it-looks-like-as-long-as-it-tastes-good-coz-im-feeling-lazy version ;)
Here goes the 'lazy man's recipe to a chocolate banana cake.

I had like 15 medium sized bananas hanging around the kitchen counter about to go mushy.. so in all went... mashed lumpy so you get a bite of the fruit. Squeeze half a lime to bring out the zing!

Cream 8oz butter and 8oz castor sugar till fluffy. Whisk 6 large eggs and sieve 12oz flour with baking powder and do the dry-wet-dry-wet-dry fold-in version. 3tbsp good quality cocoa, between the available choices i have of Van Houten and Vochelle, i prefer Vochelle for a change. Dissolve in 2 tbsp very warm (not hot) water and pour it in.

Finally goes in the mashed bananas and give it a quick fold in. Pour into a square tin of 8"x12" or watever you got(as long the mix fills half the tin, ok?) and bake at 220 Celsius for 45-50 mins. I dont like to brown this too much.

And then the frosting. 4tbsp cocoa powder, 1tbsp corn flour, 1 cup water, 3/4 cup sugar, 2oz butter and a pinch of salt. Put on a low (take note) heat and keep stirring till all lumps dissolve and you get a glossy fudgy texture. Pour over the cake, baby, it's ready.
