Vegetarian Spaghetti


You know you fight a losing battle with pasta attack. Especially the lip smacking tomatoey version.


The original pasta sauces as done by the Italians are pretty basic just like their pizza toppings cousins. Which is how i like it too, without a jumble of too many things. So in went diced onions, chopped garlic, mushrooms, tomatoes and fresh oregano into olive oil.


And you can never have too much tomato puree.. load it up for the bolognese effect! This one was going to last me through the night.


The strands are now ready to go into the boiling pot.. get good quality ones or it will spoil the whole pasta experience. Al dante, does it.



Spoon pasta, top generously with sauce, sprinkle some parmesan if you wish. All you need now is a good movie.
