Vegetarian Meehoon



This Sunday morning, we had vegetarian mee hoon in honor of my vegetarian uncle who is visiting. As you can see, we tossed in all the vegetables in the fridge. Have you seen peas in meehoon? Who says we can't? Life evolves, so should our ways.



Very easy to make. 2 big onions, 5 cloves garlic and a small piece of ginger (half inch) and 7 fresh red chillies, all ground on a traditional grinding stone (seriously, you can opt for the blender). You toast this in some vegetable oil (about 2 tbs) for 3 minutes. Add two diced tomatoes. Salt. This is the essential base. Now the next step, its your option to include what vegetables you want. Of course, the basics are sawi, taugeh, carrot, potatoes, cabbages.. you can try others as and when.. except you got to bear in mind that the natural texture and taste of some vegetables may not be complement meehoon such as spinach or kangkung or overpowering veges. But don't be afraid to experiment.. you'll be surprised what you get. The meehoon (about half a packet) you have to soak in some cold water for 5 minutes and toss into the half cooked vegetable and chilly mixture. Sprinkle enough salt and water to make sure the meehoon cooks well. You could cover the wok and reduce to minimal heat and leave it on the stove for 5 minutes and you get really fluffy cooked meehoon.
