Chittu Urundey

This is a labour intensive traditional sweet called Chittu Urundey. It is all in the preparation.. melted brown sugar is poured into mixture of green peas flour, fried coconut flakes, cardamon and powdered dried ginger. Then the paste is rolled into tiny marble-sized balls, dipped in batter of rice flour, saffron, water and salt and fried in batches of threes. Tastes better after a few days in an air-tight container.. moorish..
