Kevar Dosa, Kevar Cake

By the way, finger millet is a queer name for a grain... ragi sounds a bit better... but i know it as 'kevar' just as grandparents did.

Only recently i discovered online it can exist other than it's puttu form.

A couple of weeks back, in a moment of inspiration, I had created my version of Kevar Cake.. the creativity angel must have been lurking nearby... it was fantabulous! Had my guinea pigs fooled it was chocolate!!!



Just take a normal chocolate cake recipe and replace the flour ratio with Kevar and substitute half the butter ratio to vegetable oil as kevar is naturally drier than normal flour.





And, today i think i overdid myself again with this dosa version. It was fantastico! No hassles! Came out perfect first try. Use 2:1 ratio. Just replace the whole rice ratio with pure Kevar flour. So two cups Kevar flour and 1 cup ulunthu (soaked and blended), a sprinkle of fenugreek, leave to ferment. Add salt before cooking.

There.. what better sight than a dosa steaming on hot plate on a chilly, rainy evening...


















Yes, just look at that... looks like chocolate crepe thingy eh? Yes, no?



















Didn't bother making chutney.. it went great even with a simple sambar!
