Whole blended orange cake/Easiest orange cake


I bought premium oranges last week thinking they were the deliciously sweet variety but turns out, too sour to eat and i wanted an orange cake. Plus i had a sudden attack of the 'L' virus and so googled up for 'easy orange cake' and got this 'Whole Orange Cake' recipe not sure to whose credit but it goes to whom it may concern.  








All i had to do is chop up one whole orange and blend it skin, pulp and all. Combine a cup of sugar, a cup and half of self raising flour, 3 eggs, 180g melted butter (i used 180ml vegetable oil with double pinch of salt) and blitz together with the pureed orange and pour the mixture into greased tin. Bake at 180 degrees celsius for 40mins. Let cool before you ice if you wish.

Result: You get a dense and moist cake, almost like a carrot cake texture. A light refreshing icing can be made with a half cup of icing sugar quickly stirred into 3 teaspoon of orange juice with a tiny pinch of salt. Drizzle onto cake for a real treat. And no, it is not bitter in case you are wondering.
