Soyameat Masala



Want more bite to your vegetarian meals? Why not try the soymeat.. also known as the meal maker.



Here is a fool proof way to masala this. The key is to use minimal water. Soak like 150gms of it in hot water for 10 minutes and squeeze out the water. Now, dice 3 big onions, 5 gloves garlic, an inch of ginger and saute in 1 tbsp butter and 1tbsp ghee (believe me, this makes all the difference to the dish) plus the usual toasting condiments like aniseed, cardamom, cinnamom.. the whole works.. plus cumin and jeera and coriander.
Now toss in the soymeat and saute over medium heat, salt. 5 minutes later, squeez in lime juice. Next the crucial part. 2 tbsp curry power, 1 tstp chilly, 1 tbsp kurma powder.. toss those in and keep stirring. Get a tbsp tamarind and dilute in a cup of water. Use this tamarind juice to moisten the whole thing now and then so it wont burn up. 10 minutes later, combine half a cup of yogurt and another half cup water. Let it come to a quick simmer, sprinkle fresh coriander leaves, cover the pot and switch off

This soymeat masala goes well with capati or bread or rice accompanied with sambar, sothi or rasam or you could in true Malaysian style, try the masak lemak pucuk paku.
