Peanut cookies


Soft and crumbly..warm and melt-in-the-mouth..



but after many many trays of waiting to turn this..



into this.. there is just so much you can take.. so do go easy !

300 gms groundnuts, wok-roasted, finely ground (taste nuts whether fresh and fragrant. Burnt nuts are no good), 200 gms castor/icing sugar, 250 gms flour, about 250 ml of peanut oil (to bind mixture), 1 teaspoon salt.. just mix everything, roll into tiny balls and decorate as you will.. like a swipe of egg on top for shine.... i like it bare and naked. About 10 minutes in oven just to cook.. no browning.
