
Ok, more food post, bear with me. It's a phase a woman goes through sometimes. Lol!
The firecrackers pre-Hari Raya were threatening to blast out the whole neighbourhood. My dogs were going insane. I couldn't read or write or sleep. So, I ended up watching a rerun of 10th Kingdom on Hallmark around 1am last night.. don't ask why, but I happen to think the Wolf is cute.
Then during the intervals.. I was thinking.. Orange Muffin! I had some oranges left from last week's pasar malam. Yay! Besides I loved baking at night when the world was sleepers. It's peaceful (usually the case) and therapeutic.
So I timed myself. I didn't want to miss the show. First interval, I raced to get ingredients ready. A quick look at my supplies, I settled on this. 1 cup flour, 1 cup semolina (suji/rava) flour, 1 tsp baking powder, 1 tsp sodium bicarbonate, 3/4 cup castor sugar, 1/2 margerine, 1/4 vegetable oil (to achieve the moist and dense muffin texture), zest of an orange, juice from 2 oranges, milk enough to dilute the whole mixture to thick muffin consistency just in case. Oh shoot, the show was on back. I'll continue later. 15 minutes...second interval. I raced mixing the whole thing. The good thing about muffin, you don't have to worry about sifting, beating or folding. Just dump everything and swirl about. By the time the show came on again, I had spooned the whole thing into paper cups and into our old loyal oven. 20 minutes later, wallah! What an achievement that was!!! Hehe!
