Mother's Day. What best breakfast to celebrate with than.. yea.. tosai! Since it mothers' day off (supposedly)...three mothers and three daughters trooped off for a taste of onion, ghee, egg, masala tosai!

First time all of us sat together at the local shop to eat coz mother gen. 1 had distinct memories of her late father's dissapproval because no self respecting women of those days ate in shops! That was nearly 50 years ago.. ways hv changed..! But she couldnt help glancing back her shoulders in case old dad's spirit was hovering!



Not everyone can make a good tosai. It may look as a simple meal made out of lentils and rice.. but the real art is in the touch.. knowing instinctively the balance that goes into the batter.. too much rice, too crispy.. too much lentils, too soft. And the fermentation period... too long, too sour.. got to play around with room temperature.. too chilly an overnight.. batter doesnt rise adequately. And the final swirling, spreading on pan and cooking.. if the iron pan is not heated and 'treated' properly.. tosai will stick and u get burnt mush. As delicate as mother's care. Happy Tosai er..
